Petros Mandalis is the co-founder & CTO of Proxy Foods, an AI platform that optimizes recipe formulation and accelerates product innovation for the food-and-beverage industry (F&B). At Proxy Foods, he leads the design and implementation of machine learning models that support formulation, simulation, and decision-making processes in R&D.

Petros has 14 years’ experience delivering data-driven solutions across the pharmaceutical, financial-services, consumer-goods and energy sectors. He holds a Bachelor’s degree in Statistics from the University of Piraeus and an MSc in Statistical and Data Analysis from the University of Southampton. He is currently completing a PhD focused on Machine Learning for Big Data.
